    Founded in 2015, the consortium's objectives include protecting the endangered Cinisara cattle breed, enhancing production, promoting product consumption, and fostering the exchange of best practices among members. It brings together numerous producer companies that share the goal of actively working to protect biodiversity, promote marginal areas, and implement joint strategies to enhance typical local products, with particular attention to the Cinisara cattle breed and its derivatives. Since 2020, it has embarked on the creation of a genuine production chain, aggregating companies involved in the transformation and commercialization of products.

  • CONSORTIUM FOR THE PROTECTION OF THE CINISARA CATTLE BREED AND ITS DERIVATIVES FOR THE FESTINO: "PETIT CADEAUX" PROJECT

    This project arose from the consortium's collaboration with artist Dario Denso Andriolo. It aims to blend a traditional product from western Sicilian tradition with contemporary experimentation, representing the consortium's journey to bring the Cinisara cattle tradition and, more broadly, an environmentally and territorially friendly production model into the third millennium.

    Starting with the enhancement of three guiding numbers: 400 (years of the celebration), 1624 (the year of the first Santa Rosalia festino), and 2024, the project launches a line of products dedicated to the event. These are three new sizes of “Caciocavallo Palermitano” cheese, weighing 400g, 1624g, and 2024g, respectively. The product is deeply rooted in the cheesemaking tradition of western Sicily, reimagined in new formats to create a “Petit Cadeaux” to carry with you—a gift that embodies Sicilian wisdom and tradition to be appreciated for its taste and heritage.

    The new formats will be produced using 3D printing technology, which allows for prototyping and subsequently limited edition production of the necessary shapes. This is done using a reusable food-grade ABS support, ensuring the molding of the three products and the inscription of the symbolic numbers that also represent the weights. The three formats will adhere to the production guidelines, with “Petit Cadeaux 400” being the emblem of the celebration, alongside “Petit Cadeaux 1624” and “Petit Cadeaux 2024,” all made with Cinisara cow milk.
